From Piedmont to new horizons

Land, sea, roots and innovation, from these concepts the Chef Luca Seveso, with the new menu, continues the story of his cuisine and the tradition of the MAIO house. Piedmont is always the starting point for reaching farther afield, a paradigm that has allowed MAIO to become a staple of gourmet cuisine in the city of Milan, for its citizens and its visitors.

The cuisine of Luca Seveso, who has been leading the kitchen of MAIO Restaurant for over ten years, continues to be characterized by its strong territorial imprint, linked to seasonal cycles. The “land” dishes open up to contaminations capable of making new and intriguing icons of the regional tradition. Even the “sea” is a fluid element, a port of departure for new destinations of taste.

From these premises are born dishes such as Spaghettini with clams with almond milk and courgette flowers, or the Piedmontese Fassona Tartare garnished with soft egg, cream of peas with mint and trout caviar.
